Nothing says summer quite like some fresh juicy peaches! These summer peach crumble bars are a special summer treat! Fresh peaches all on their own are one of the great treats of summer—and also make for healthy desserts or snacks. When you’ve eaten your fill of ripe, juicy peaches as-is, this peach dessert recipe will keep you in peachy deliciousness all season long. Take advantage of those sweet summer peaches all summer long! There are so many delicious things to make with peaches and I will be sharing a couple ideas in the coming weeks. First are these amazing peach crumble bars, made with fresh juicy peaches from Melissa’s Produce!

Summer Peach Crumble Bars

Active Time: 15 minutes

Cook Time: 45 minutes

Ingredients

Base:

10 tbsp unsalted butter, softened

½ cup granulated sugar

1 large egg

¼ tsp cinnamon

¼ tsp salt

1 2/3 cups all-purpose flour

Filling:

1 1/2 lbs peaches*

Zest 1 lemon

3 tbsp granulated sugar

Crumble:

6 tbsp unsalted butter, softened

½ cup brown sugar

1 cup all-purpose flour

¼ tsp salt

Directions

Grease and line a 9 x 13” baking pan with parchment paper. Preheat oven to 350° F.

Make base:

In a large bowl, blend butter, sugar, and egg together with a stand mixer or handheld beaters on medium high until creamy and light.

Add cinnamon, salt, and flour, blending on low until just combined.

Press mixture into pan. To make this easier, put several large dollops of mixture in different portions of the pan and push then together with your fingertips. Pat into an even layer.

Chill in fridge while preparing remaining layers.

Make filling:

Slice peaches into ¼” or thinner slices.

Toss with lemon zest and sugar.

Make crumble topping:

On low speed, blend all ingredients until just combined into small crumbles but still a bit powdery**.

Toss further with your fingers until slightly larger crumbs form (no larger than a pea).

On the chilled base, spread an even layer of peaches.

Sprinkle the crumble on top of the peaches as evenly as possible, but do not press down.

Bake for 45-50 minutes, or until golden on top and peaches are slightly bubbling at edges.

Cool in pan for at least 20 minutes before removing and allow to cool completely before eating.

Will store in a sealed container in the fridge for a couple days, but will not be as crisp.

For an even cooler treat, top with some vanilla or vanilla bean ice cream! YUM! These summer peach crumble bars will be a hit with everyone!

Notes

*Any variety of peaches work. This sample used a mixture of regular yellow, white, and white donut peaches. Just note that donut peaches are sweeter than standard yellow or white peaches, so adjust sugar accordingly.

**Reduce the number of dishes you have to wash: do this in the same bowl you used for the base.

It’s Fall! Which means everything pumpkin spice and everything nice, right? In order to make some of my favorite fall treats though, I need to do some shopping to stock up! Luckily, Albertsons is almost my next door neighbor and is my go-to store for all of my favorite snacks. Right now they are having a special Stock Up Sale through 10/13 that you won’t want to miss. I was able to stock up on all of my favorite General Mills products to make one of my all time favorite fall treats, a Fall Harvest Trail Mix! Albertsons made it easy for me to stock up to make this most delicious treat.

I love making this! It’s the perfect snack to make to share at the barn, for a special after school snack, after the gym, a boy or girl scouts meeting, or if you play a team sport and need a snack to fuel up that the whole team will love. It is just so festive and fun to eat!

Once I had everything I needed from the store, I was ready to get the party started with this trail mix!

Fall-Pumpkin-Mix

Here’s everything you’ll need to make yours! The best thing I love about it is that you can add whatever else you like or take out whatever you want as your taste buds and needs desire. You can also play around with the amounts of each item that you are adding as well if you need to make a larger or smaller batch. It also does not matter too much the order in which you add each ingredient into the bowl, I’d just recommend putting in the larger items first as the smaller ones (like the sunflower and pumpkin seeds) will sink to the bottom and not mix as well if they are added in first.

Fall Harvest Trail Mix

Honey Nut Cherrios- 1 1/2 cups

Cinnamon Toast Chrunch- 1 1/2 cups

Nature Valley Crunchy Granola Bars- 1 pouch (2 bars)

Jet-Puffed Candy Corn Marshmallows- 1 Cup

Pumpkin Spice Chips- 1 Cup

Pumpkin Seeds- 1/2 Cup

Pretzels- 1 Cup

Sunflower Seeds- 1/2 Cup

Yogurt Raisins- 1/2 Cup

Candy Corn- 1/2 Cup

Reese’s Pieces- 1 box

Festive bowl or bags to package them up in.

*Makes about 8- 1 Cup Servings*

General-Mills-Granola

First pour the Honey Nut Cherrios and Cinnamon Toast Crunch into a large bowl. Then take the Nature Valley Crunchy Granola Bars and crumble them up into the mix like shown above.

Mix in all the other ingredients and then you are ready to serve into a cute party bowl, pumpkin, or package up to go into some festive bags! Doesn’t it look yummy?

Or if you need something for on the go, in the car, to pass out as a snack at a meeting, after a game or practice for the team, then get some fall or Halloween themed bags (they’re super affordable, I got a package of 20 bags for just under a buck!) and fill them up! I used mine as an after school snack and to pass out as a special treat at the barn!

How adorable is this?! One last way I packaged up my Fall Harvest Trail Mix was into these cute Halloween Bat Coffins. They easily fit a one cup serving with room for more. Now it’s time to enjoy this tasty after school snack! Yum!

You have probably noticed by now that I love to have picnics and tea parties and anything else that will get me outdoors. Well, I found a product here when I attended Expo West back in March that is just PERFECT for a nice spring or summer picnic! It is called Good Boy Organics!

Good Boy Organics has two products that I reviewed.  BOPS (Baked Organic Potato Snack) pictured here in four different flavors and the Organicasaurus. All of their products are USDA certified organic, certified gluten-free,  have no preservatives, no trans fat, and are baked, not fried. The BOPS also have 65% less fat in them than regular potato chips! These chips are a reduced fat alternative to fried potato chips. I am also in love with the packaging. The packaging for the BOPS makes me want to have a picnic every time I look at it! Good Boy Organics focus is on Certified Organic products for the entire family. Look for them at your local grocer!
