Grilling Ideas

Here are a few ideas on some yummy things to grill! From veggies, to fruit, you can basically grill anything you can think of!

Grilled Shrimp Foil Packets

These are super delicious and easy to make. If you don’t like shrimp, are allergic to shrimp or anything else, you can easily substitute chicken or steak for the shrimp.

Shrimp Foil Packets

INGREDIENTS

1/2 lb. large shrimp (or chicken/steak)

2 cloves garlic, minced

2 smoked andouille sausages, thinly sliced 

3 ears corn, each cut crosswise into 3 pieces

1.5 lbs bag of Melissa’s Baby Dutch Yellow Potatoes- cut potatoes in half

2 tbsp extra-virgin olive oil

1 tbsp. Old Bay seasoning

Kosher salt

Freshly ground black pepper

2 tbsp. freshly chopped parsley

1 lemon, sliced into thin wedges

4 tbsp. butter

Directions

  1. Preheat grill. Cut 4 sheets of foil about 14 inches long. Divide shrimp, garlic, sausage, corn, and potatoes evenly over the foil sheets. Drizzle with oil, and add Old Bay seasoning and season to taste with salt and pepper. Top with parsley, lemon and a tablespoon of butter each.
  2. Fold foil packets crosswise over the shrimp boil mixture to completely cover the food. Roll top and bottom edges to seal them closed.
  3. Place foil packets on grill and cook until just cooked through, about 15 to 20 minutes. Then enjoy!

Grilled Veggies

Grilling veggies is so easy and so simple and even more delicious! You can use pretty much whatever veggies you are craving and feel like using. You can grill them up all at the same time too. Here are some tips on grilling vegetables.

*Slice the vegetables the same thickness so they cook at the same rate.

 *Drizzle the vegetables with olive oil then spread it evenly with your fingers.

*Season them with your favorite seasonings, salt and/or freshly ground black pepper. Add dried herbs such as oregano, mint, tarragon, or basil if you wish.

*Grill them! Grill over medium heat–350°F to 450°F. Close the grill and cook the vegetables, flipping after 4-5 minutes.

Grilled Fruit

Fruit? Yes Fruit! Some of my favorites to grill include peaches, Plantains (like the ones that come in the grilling basket!), pineapple, apples, and watermelon!

The Plantains were SO delicious! Just coat the top with a mixture of honey, olive oil and fresh lime juice before and after grilling and omg, it is the BEST!

Grilled pineapple and watermelon are amazing too! The pineapple is excellent to use as a topping on hamburgers as well. I just used some maple syrup, honey and brown sugar to coat the pineapple pieces in, and for the watermelon used a mixture of honey and lime juice. Then you can top it with feta cheese and silantro, basil, parsley or other herbs if you wish, or just eat it by itself!
