Easy Zucchini Nachos

Looking for a healthier option for game day food? The big game calls for game day food, but what if you are trying to eat a little healthier? Snacking doesn’t have to be unhealthy. These Zucchini Nachos are super easy to make, delicious, and definitely a better for you choice. Made with lots of fresh produce from Melissa’s Produce, you can’t go wrong with these! Perfect for game day, or any other day of the year!

Zucchini Nachos ready to eat!

Ingredients

Makes about 4-5 servings

  • 4 medium zucchini, cut into 1/4 inch slices
  • pepper to taste
  • 2 tablespoons oil
  • 1 cup black beans
  • 1 cup corn
  • 1 cup cheese, shredded
  • 1 cup tomato, diced
  • 1/4 cup each of green and purple onions
  • 1 jalapeno, sliced
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • 1 tablespoon sour cream
  • 2 tablespoons lime juice
  • any other nacho toppings you are craving

Directions

*Preheat oven to 400 degrees. Spray a baking sheet with nonstick spray.

*After slicing the zucchini, toss the zucchini in the oil and pepper.

*Lay zucchini slices on the baking sheet.

*Bake until slightly tender for 5 minutes, flip them over and then bake for another 5 minutes.

*Top zucchini slices with the black beans and cheese.

*Bake until the cheese has melted, about 3-5 minutes.

*Top the cheesy zucchini with corn, tomato, onions, avocado, cilantro, sour cream, a little bit more cheese, jalapenoes and lime juice.

  1. This is a different way to approach zucchini. Does the zucchini stay crisp or does it get soggy because it is a watery vegetable? The flavors sound like they would be great together.

  2. This looks so yummy. I love the mix of veggies and the sour cream too. Nachos are fun and this is a great healthy spin on them
