Mexican Street Corn Salad

Mexican Street Corn Salad

By Erin

Mexican Street Corn is one of my favorite things and if there’s one thing I love this time of year, it’s a delicious summer salad! So why not put the two things together? My niece has been asking for corn a LOT so I thought I’d make a fun corn salad for everyone to enjoy. This Mexican Street Corn Salad is perfect for a crowd at your next get-together or if you’re just trying to put dinner on the table quickly. Thanks to Melissa’s Produce for the fresh produce to create this with!
