🛒 Ingredients for Gingerbread Mickey Rice Krispie Treats
For the Gingerbread Mickey Treats
- ½ cup unsalted sweet cream butter
- 1 (16 oz) bag mini marshmallows
- 1 teaspoon pure vanilla extract
- ¼ cup molasses
- 1 teaspoon ground ginger
- ¼ teaspoon ground clove
- 1 ½ cup finely chopped gingersnaps
- 8 cup Rice Krispies cereal
- 1 (4-inch) Mickey Mouse head cookie cutter
- 1 cup Cinnamon Toast Crunch Cinnadust
- ¼ cup gold sanding sugar
For Decorating Your Treats
- 1 (8 oz) bag Ghirardelli white chocolate melting wafers
- 1 (8 oz) bag Ghirardelli dark chocolate melting wafers
- 2 disposable piping bags
- Red sanding sugar
- Light blue sanding sugar
- Purple sanding sugar
- 1 (8 oz) package Hershey Peppermint Bark Kisses
- 2 packages Wilton Black, Red, and White bow royal icing decorations, using only the red bows
🎅 Directions
Make the Gingerbread Rice Krispie Treats

- In a large stock pot over medium heat, melt the butter.
- Mix in the mini marshmallows and stir until mostly melted.
- Stir in the vanilla extract, molasses, ginger, and clove.
- Remove from heat and quickly mix in the gingersnap crumbs and Rice Krispies cereal.
- Press the mixture onto a 9×13 baking sheet, using buttered fingers to prevent sticking.
- Spray the Mickey cookie cutter with Pam to help release the shapes.
- Cut out 16 Mickey heads, you may need to press scraps back together to get all 16.
- Place the cut shapes onto a parchment-lined, lightly sprayed cookie sheet.
- Let sit for 30 minutes.

Decorate the Mickey Treats
- Melt both the white and dark chocolate wafers; transfer each to its own piping bag.
- Combine the Cinnadust and gold sanding sugar in a small bowl.
- Dip the tops of each treat into the cinnamon-sugar mix; shake off excess.
- Cut the tip of the white chocolate piping bag and pipe an outline around each treat.
- For Minnie, pipe a loop in the middle of the ears and a curved line for her smile.
- Add a dollop of white chocolate to the back of a red bow to “glue” it in place.

Make the Sugar Hearts (the cutest little noses!)
- Line a cookie sheet with parchment or a silicone mat.
- Pipe 1-inch white chocolate hearts onto the sheet.
- Coat with red sanding sugar and allow to harden.
- Carefully remove and add a dollop of white chocolate on the back.
- Place one heart in the center of each treat for the nose.

Add the Details to Your Gingerbread Mickey
- Using the melted dark chocolate, pipe eyes above the nose.
- Using white chocolate again, pipe 32 medium dots.
- Sprinkle half with blue sanding sugar and half with purple, then let harden.
- Add a small dollop of white chocolate to the back of each dot and place at the ends of the smile.

Final Step: Let the Magic Set
- Allow everything to harden for about 30 minutes before serving and enjoying.
