Featuring Ojai Pixie Tangerines from Melissa’s Produce and lots of other delicious fruits from Melissa’s, this Spring Fruit Board is perfect for Easter and any other spring gatherings!

Ingredients:
Fruit:

3-4 Ojai Pixie Tangerines, sliced
1 pound Red grapes
1⁄2 Watermelon, sliced
1⁄2 Pineapple peeled, cored and sliced
1⁄2 Cantaloupe, seeds removed and sliced

2 Kiwi’s, sliced 1 Kiwi cut in half
1 Mango, sliced into chunks
1 cup Strawberries
1 cup Raspberries
1 cup Blueberries
1 cup Blackberries
Lemon juice optional

Dips
1⁄2 cup Whip Cream 1⁄2 cup Honey

Instructions:
Layout the boards, and bowls.
Fill the small bowls with the whip cream and honey.
Place the 2 small bowls around the edge of the board.
Position the fruit
Place the Ojai Pixie Tangerines in a line across the board.
Position the grapes on the board.
Add the sliced watermelon, pineapple, and cantaloupe on the board. Fill in the spaces with the kiwi, mango, and strawberries.
In a small bowl add the blueberries, blackberries, and raspberries. Toss to combine.
Add the berry mixture on the board.
Garnish with mint and small floral pieces.

Cinnamon Roll Apple Pie

It’s about that time of year again! Apple picking time! What do you make with all of your apples? Apple pie of course! Enjoy all the flavors of a warm apple pie this fall and surprise guests with a cinnamon roll twist on this traditional fall treat. Inspired by the favorite breakfast pastry, leftover pie makes a great breakfast the next day. Save time by using store-bought crust and cinnamon roll dough.

Ingredients

5 Cups Chopped Apple, peeled (Honeycrisp or Granny Smith Apples are best)

3 tablespoons sugar

3 tablespoons flour

2 teaspoons ground cinnamon

¼ teaspoon kosher salt

1/4 cup bourbon

2 tablespoons unsalted butter, cubed

1 pre-made pie crust

1 package of cinnamon rolls

Cinnamon Icing

1 Cup powdered sugar

1 tablespoon ground cinnamon

1-3 tablespoons whole milk

1 disposable piping bag

Directions

Preheat oven to 450 degrees and spray a 9 inch deep pie dish with baking spray.

In medium bowl, mix together the apples, sugar, flour, cinnamon, salt, and bourbon and mix together.

Unroll the pie crust, and place into a 9 inch deep pie pan.

Pour the apple mixture into the pie shell.

Place the butter over the apple mixture.

Place pie onto a cookie sheet.

Bake in the oven for 15 minutes at 450 and then bring the oven temp down to 350 degrees, continue baking for 30-45 minutes or until the center is set and the edges are a nice golden brown.

Remove from oven and allow to rest for 15 minutes.

Remove cinnamon rolls from can and place onto a parchment lined cookie sheet.

Following the directions on the pan, bake the cinnamon rolls as recommended.

Once they are baked, allow to cool for 5 minutes before placing them onto the top of the apple pie.

Cinnamon Icing Directions

Using a small bowl, whisk all ingredients together until combined and smooth.

Pour into a piping bag.

Cut the tip and drizzle the icing over the pie.

Cut and serve!

Triple Berry Salad

This Triple Berry Salad with Lemon Poppyseed dressing is such a summer delight to enjoy or anytime berries are in season. It is SO easy to make. Melissa’s Produce makes it easy to stock up on berries too so you can enjoy this salad all spring and summer long. I will be enjoying this for as long as I can since August was a total bust for me with some fun tooth issues, so now I am ready to have ALL.THE.THINGS. I missed out on last month.

Prep time: 10 minutes

Total time: 20 minutes

Serves: 4

Ingredients

6 cups of mixed greens

¼ cup of blueberries, raspberries, and sliced strawberries

½ cup of Boschini cheese

Triple Berry Salad and Lemon Poppyseed Dressing

Lemon Poppyseed Dressing

1 tbsp vinegar

3 tbsp mayo

Juice of 1 lemon

1 tsp poppyseeds

Instructions

  1. Place mixed greens in a bowl 
  2. Place fruit on top and then slice the cheese and place on top of the salad.
  3. Mix all dressing ingredients in a mason jar and shake. You’ll need to shake it well so that it really mixes in. 
  4. Drizzle dressing over the salad and enjoy!
