Salty Beach Cocktail anyone? Summer is almost here and you know what that means! Time to spend as much time outside as possible, preferably by a pool or the beach with a tropical cocktail in hand. From frozen drinks to icy margaritas and tropical mixed cocktails, there’s something for every mood, party, and holiday this summer. Celebrate the return of summer, the warm weather and sunshine with this refreshing cocktail! Cheers!

Ingredients:

Spiced Rum

Malibu Passion Fruit Rum

Blue Curacao

Pineapple Juice

Sprite

Ice

Lime, Orange slices and maraschino cherries to garnish.

Salty Beach Cocktail Summer drink

Directions:
Fill your glass with ice.
In a bar shaker add your pineapple juice, sprite, and spiced rum, then shake to combine. Pour your mixture into the glass only to fill it 1⁄2 way.
Now in a separate bar shaker add ice 1⁄2 way full, then add your Malibu, and Blue Curacao. Shake to combine.
Strain the liquor mixture into the glass on top of the pineapple mixture.
Garnish with the fruit and then enjoy!

Nothing says summer quite like some fresh juicy peaches! These summer peach crumble bars are a special summer treat! Fresh peaches all on their own are one of the great treats of summer—and also make for healthy desserts or snacks. When you’ve eaten your fill of ripe, juicy peaches as-is, this peach dessert recipe will keep you in peachy deliciousness all season long. Take advantage of those sweet summer peaches all summer long! There are so many delicious things to make with peaches and I will be sharing a couple ideas in the coming weeks. First are these amazing peach crumble bars, made with fresh juicy peaches from Melissa’s Produce!

Summer Peach Crumble Bars

Ingredients

Base:

10 tbsp unsalted butter, softened

½ cup granulated sugar

1 large egg

¼ tsp cinnamon

¼ tsp salt

1 2/3 cups all-purpose flour

Filling:

1 1/2 lbs peaches*

Zest 1 lemon

3 tbsp granulated sugar

Crumble:

6 tbsp unsalted butter, softened

½ cup brown sugar

1 cup all-purpose flour

¼ tsp salt

Directions

Grease and line a 9 x 13” baking pan with parchment paper. Preheat oven to 350° F.

Make base:

In a large bowl, blend butter, sugar, and egg together with a stand mixer or handheld beaters on medium high until creamy and light.

Add cinnamon, salt, and flour, blending on low until just combined.

Press mixture into pan. To make this easier, put several large dollops of mixture in different portions of the pan and push then together with your fingertips. Pat into an even layer.

Chill in fridge while preparing remaining layers.

Make filling:

Slice peaches into ¼” or thinner slices.

Toss with lemon zest and sugar.

Make crumble topping:

On low speed, blend all ingredients until just combined into small crumbles but still a bit powdery**.

Toss further with your fingers until slightly larger crumbs form (no larger than a pea).

On the chilled base, spread an even layer of peaches.

Sprinkle the crumble on top of the peaches as evenly as possible, but do not press down.

Bake for 45-50 minutes, or until golden on top and peaches are slightly bubbling at edges.

Cool in pan for at least 20 minutes before removing and allow to cool completely before eating.

Will store in a sealed container in the fridge for a couple days, but will not be as crisp.

For an even cooler treat, top with some vanilla or vanilla bean ice cream! YUM! These summer peach crumble bars will be a hit with everyone!

Notes

*Any variety of peaches work. This sample used a mixture of regular yellow, white, and white donut peaches. Just note that donut peaches are sweeter than standard yellow or white peaches, so adjust sugar accordingly.

**Reduce the number of dishes you have to wash: do this in the same bowl you used for the base.

Another place to keep cool this summer in Southern California is Knott’s Soak City in Buena Park. Splash into summer at Knott’s Soak City Waterpark. Orange County’s largest outdoor water park is the perfect family destination to cool off during these hot and humid summer days with over 15-acres of aqua-tastic fun. Come on and splash into the fun!

In 2017, Knott’s Soak City expanded the water park to offer even more fun in the sun including a fully remodeled Longboard’s Grill restaurant, additional seating areas, and new spacious cabanas, plus two new water slide towers – Shore Break and The Wedge.

Shore Break towers over seven stories high and features six different thrilling water slide experiences. Four of the slides include Aqua-Launch chambers where guests wait anxiously as the floor drops out from underneath their feet sending them on high speed free fall down a 60 foot tall slide. Additionally, Shore Break offers two dueling tube slides which will have riders zipping through drops and turns. The newest family raft ride, the Wedge, takes up to six riders on an open-raft trip navigating through twists, turns and unexpected drops for some spills and thrills. Guests can look forward to another unforgettable summer season running through September 9th at Knott’s Soak City Waterpark. 

One of my favorite things to go on at Soak City! Go for a float down Sunset River and let those cares just float away. On this classic lazy river you’ll meander down the 1,780 foot long waterway to a destination of pure relaxation and enjoy some delightful scenery along the way. Sunset River is a great way for everyone in the family to cool off and chill out.

Tidal Wave Bay is another one of my favorites to just float and relax. Holding 750,000 gallons of water, this state-of-the-art wave pool has enough room for everyone in the family to catch some awesome waves. Grab a tube and ride the waves or go freestyle and body-surf on your own. Tidal Wave Bay is surrounded by lounge chairs and cabanas so chilling out by the pool is fun too.

The Beach House offers three stories of hands-on water fun including interactive water guns, nozzles, faucets and other surprises. Every five minutes the water bucket unloads 500 gallons of water on anyone below! This is a fun place to just hang out at.

Even better news for Gold and Platinum Passholders! They can enter Knott’s Soak City Water Park starting at 9am on weekends through August 5.
